Rimming-over is the skin removal from the head, front and rear limbs, neck, and tail, a skin incision along the middle line of the abdomen, and partially from the chest and abdomen of the carcass. The area of bleaching in cattle carcasses is 20-30% of the entire skin area, depending on the age and weight of the animal. This process helps increase line productivity when using a skinner. Rimming-over is carried out while the carcass is suspended on a suspended path. Special knives are used for rimming-over, both traditional manual knives and electric or pneumatic disc knives. It is worth noting that this platform can be stationary, but the lifting platform greatly increases the productivity of the line.
